If you know me, you know that when my kids are in the pureed baby food stage I have no qualms about mixing different foods together to speed up the feeding process. That mixing has resulted in some experimenting over the past years and a few creations that my kids love and I feel are a really tasty and healthy choice for them.
Here is a GREAT breakfast that is a good source of protein, iron, fiber and vitamin C.
PB&J Oatmeal
1 serving
1/2 c. prepared instant oatmeal
1 - 1/2 tablespoon of natural peanut butter or almond butter (if allergic to peanuts)
1/4c. unsweetened applesauce
fresh or thawed frozen blueberries and/or strawberries
Mix the first three ingredients and top with fruit. Serve and enjoy! (Note: sometimes I'll use yogurt instead of applesauce for a little extra protein and probiotics).
